A family with a heritage of love for the land, the farmland and the olive trees, with a generations-long farming tradition, and with terraltina roots. We are dedicated to promoting our local fruits and to bringing our oil to your tables, for everyone to enjoy.

ORIGINS
TRINXERA is a family project that intends to promote the empeltre olive variety, which grows on centuries-old olive trees.
We work to obtain a high quality extra virgin olive oil (EVOO). Carefully harvesting the fruits from the trees, using manual picking methods and blankets. then processing these fruits on the same day of the harvest, with the objective of better maintaining the organoleptic characteristics of the final product.
OUR OIL
Our oil is a high quality extra virgin olive oil, single varietal empeltre. The olives are handpicked at their optimal point of maturity, not using any mechanical instruments that could damage the fruits. Shortly after the harvest, the grinding of the fruits takes place, using cold pressing methods and mechanical processes.
VARIETY
VARIETY
EMPELTRE is an olive variety grown in the areas of Baix Aragó, Vall de l’Ebre, north of País Valencià, and Mallorca. Its name comes from the word empelt (graft), since olive trees of this variety typically need to be grafted.
These olive trees have bright, dark green leaves, and they usually grow at a height of around 450 meters. They adapt well to low quality terrains, draughts and all sorts of inclement weather (snow, frost, wind, etc.).
The resulting oil is highly appreciated due to its sensory characteristics: intense fruity flavor, with green and mature notes that complement each other. It is highly stable so it can be preserved for long periods of time.

THE TASTING
The organoleptic analysis of TRINXERA Premium shows a high quality extra virgin olive oil (EVOO), well balanced, and with a predominance of green fruit aroma. It has a characteristic bitter flavour, from the green or ripening olives, and a pleasant pungency. A note of sweetness balances the profile, making our oil a unique product.
Its fluid texture and intense colour combine with the smoothness provided by a hint of almond flavour, and with notes of green walnut, artichoke and tomato.

HEALTH BENEFITS
TRINXERA Premium is an extra virgin olive oil rich in polyphenols, with values over 650 mg/Kg, well over the EU reference value of 250 mg/Kg. Thanks to the absence of aggressive refining processes that remove the most part. Polyphenols have antioxidant and anti-inflammatory properties, as well as an important nutritional value. The beneficial properties of phenolic compounds have been recognized by the European Food Safety Authority (EFSA) and compiled in the European Directive 432/2012.
At TRINXERA we work with grinding processes that respect the fruits, so that all the beneficial compounds found in olive oil are preserved. The resulting product has a characteristic bitter taste due to the oleuropeïna, as well the pungency provided by the presence of oleocanthal, both of them polyphenols exclusively found in olive oil.

PREMIUM EXTRA VIRGIN OLIVE OIL
Limited edition extra virgin olive oil. Single-variety Empeltre, the olives are harvested at their optimal ripening point. Balanced, fruity, green olive, medium bitterness and spiciness, with almond notes.
Cold pressed. It is a balanced, green fruity EVOO with a spicy and bitter middle and an appreciated almond aftertaste. Perfect for raw consumption.
